This loaf is a great bread replacement. It’s high in protein, fibre and healthy fats, and contains basically no sugar! It freezes well, goes well in the toaster and can be topped with sweet or savoury items! On of my favourites is avocado!

Ingredients
2 cups ground flax seeds
5 large eggs
1 Tbsp baking powder
1/2 cup water
1/3 cup melted coconut oil or olive oil
1/2 tsp salt
Instructions
In a mixing bowl, combine flax, baking powder and salt, and mix well.
In a separate bowl, combine eggs, water and oil, and mix well.
Add the wet ingredients to the dry ingredients, and mix well. Let sit for a few minutes.
Pour into a large baking dish to make a focaccia style bread, or into a baking pan to make a loaf. Make sure your pan is lined with parchment paper or greased with coconut oil.
Bake at 350 for 40 to 50 minutes.
Let cool, slice and store in fridge or freezer.
